A Sweet Cinco de Mayo

I know, I know, Cinco de Mayo is all about avocados, margaritas, tacos and salsa but as it turns out, in certain regions of Mexico, sweet potatoes play a big role in the cuisine. Sweet potatoes were very important in the Mayan diet and were used to extend their corn-based dishes when corn was scarce. It's no wonder we are naturally inclined to pair our sweets with cumin, jalapeno, black beans and chipotle! To learn more about the history of sweet potatoes in Mexican cuisine, click here.
