Sweet Potato Fans Unite

It seems that I am not the only one excited about Sweet Potato season. Last week popular New York Times columnist Mark Bittman praised all things sweet potato in his Minimalist column. He has a delicious recipe for stir-fried sweet potatoes online. Check out the video to see how easy it is. It only has a couple of ingredients and it is amazing! I could not believe how fast it was to prepare and the taste is wonderful. I am definitely going to serve this one at Thanksgiving. Also, be sure to check out Bittman's blog for the accompanying Sweet Potato Pancakes recipe. Yummy!

Also in the New York Times this week...

Martha Rose Shulman had two new sweet potato articles in the Health and Nutrition pages. A column on the Versatile Sweet Potato and a great recipe for Sweet Potato and Butternut Squash Soup. This was the NYT's most downloaded recipe of the week!!

The holiday season is really putting the spotlight on the popularity of Sweet Potatoes. Just look at the variety of the recipes. Soup, Pancakes, Stir Fry. It really shows off the amazing versatility of one of North Carolina's premiere crops. I hope you'll try one of these for Thanksgiving. I can't think of a better way to start a day of After-Thanksgiving shopping than those Sweet Potato Pancakes.

P.S. Remember if you have any baked sweet potatoes left over after the holidays, you are halfway to making another dish. They are not just leftovers, they are the perfect ingredient for tomorrows soup, casserole or even those stuffed sweet potatoes I mentioned in a previous post.
