Just for the Kids

Getting your children involved in cooking is a great way to have fun together, while encouraging healthy eating habits that will last a lifetime. Sweet Potatoes Fries are the perfect kid food. They are sweet, crunchy, can be eaten with little fingers and best of all, they are healthy. Sweet Potatoes are loaded with Vitamin A, Potassium, and fiber.



Sweet Potato Fries
I make these a lot and love them. The trick to crispier "chips" is to space them out pretty well on the sheet (don't crowd).

Prep Time: 5 minutes - Cook Time: 30 minutes

Ingredients:

  • 2 large sweet potatoes
  • 1 tbsp of olive oil
  • 1/4 tsp salt

Preparation: Preheat the oven to 450 degrees. Peel and cut the sweet potatoes into 1/2 inch strips or wedges and toss in the oil and salt. Arrange in a single layer on a nonstick baking sheet. Place in oven for 30 minutes, turning once.

Sweet Cinnamon Variation:

Ingredients:
  • 2 large sweet potatoes
  • 1 tbsp cinnamon
  • 1 tbsp sugar

Preparation:
Preheat oven to 400 degrees Fahrenheit. Peel and cut the sweet potatoes into 1/2 inch strips. Mix the cinnamon sugar in a small bowl, then sprinkle over the wedges. Arrange in a single layer on a nonstick baking sheet lined with parchment paper. The paper will help keep these from sticking since the recipe doesn't use oil. Bake in oven for 30 minutes, turning once.
