Sweet Sticks - Cooked, Raw and Mixed

Everyone knows that sweet potatoes are great cooked, but have you ever tried them raw? Simply slice sweet potatoes into french fry size sticks and serve them with your favorite dips, or ranch dressing.  But the fun doesn't stop there.  These sweet and colorful sticks are the perfect accent to any party tray.  Serve alongside grape tomatoes and bell peppers for an eye popping display.  And Oh So Much Flavor!




Be sure to slice some extra sticks to mix into in your favorite recipes. Toss them into stir fries.  Sweet or Spicy - it doesn't matter - the versatile flavors of the sweet potato will easily blend. Grate them raw into your coleslaw for an asian salad that is hard to beat. Sweet potatoes add a one-two punch of flavor and color that makes them a sure winner every time. They are also a tasty way to sneak a little fiber into your favorite meals.

If your looking for quick and healthy snack, try these baked sweet potato sticks.  They use hardly any oil, but are so delicious and crispy that my mouth is watering just thinking about another batch. The secret is the egg-white wash. It's low fat and high flavor all around. It is so yummy to eat healthy.

Sweet Potatoes are so adaptable, you can serve them a different way every day of the week. It can be so yummy to eat healthy.



Baked Sweet Potato Sticks


Ingredients:
2 medium sweet potatoes
2 medium sweet potatoes
1/2 tsp. salt (optional)
1/8 tsp. pepper (optional)

Directions:

Preheat oven to 350°F and spray two baking sheets with cooking spray.

Peel the sweet potatoes and cut into slices no thicker than 1/4 inch. Stack two or three slices at a time and cut strips no wider than 1/4 inch.

In a medium-size bowl, beat the egg whites with a fork or a whisk for about a minute until they are frothy.Place the potato strips into the bowl and gently toss them until well coated.

Lay the sticks on the baking sheets in a single layer. The potatoes should not touch each other.

Bake the potatoes for 30-35 minutes, checking them after 15 minutes to make sure they're browning on the bottom but are not turning completely brown.

Remove the baking sheets from the oven and sprinkle the potato chips with salt and pepper. Use a spatula to remove the sticks from the pans. (You may need to use a bit of force, but most of the sticks should remain intact.)


Hint: You can use kosher salt to season the potatoes. It's fun to put the salt in a small bowl so kids can take a pinch and toss it on the fries.
