Sweet Potato - Trick or Treat!




Halloween is just a few days away and I can hardly wait.  I love everything about his holiday, the costumes, the Jack-O'-Lanterns,  scary movies, Halloween parties, and most of all - the treats! This year, don't get spooked by the same old miniature candy bars and gumballs.  Instead spice up your party with a truly unique sweet treat - the Halloween Sweet Potato Cake. This beautiful light orange cake is absolutely divine, with a rich chocolate cream cheese frosting and an Orange Cream Filling. Sweet potatoes make it extra moist, and a hint of spice makes it the perfect dessert for an Autumn day.




Of course, what's a party without ice cream. This Spiced Sweet Potato Ice Cream won finecooking.com's Ice cream contest.  With ginger, nutmeg, and brown sugar, it is an excellent complement to the Halloween Cake.  Just be sure to make a few copies of the recipe.  Your guests are sure to ask for it.

That takes care of the treats, but what about the trick?  Check out The Daily Green's Superfood Index where you will find a number of 'top ten lists' of awesomely healthy foods.  A true superfood, sweet potatoes are a top source of both Beta Carotene and Vitamin A.  Sweet Potatoes are also the No. 1 source of potassium – one potato has 694 mg of potassium which is well above the average banana!  All that in such a sweet and versatile package.  Now that is quite a trick!

  7. I tried the cake and it was a big hit. You can't really tast the sweet potatoes. I added a little ginger to mine.

  8. I love the color of this cake. It is the perfect shade for fall. I made a pumpkin cake once but it was almost brown. This one is SO much prettier. I am going to give it a try for my Thanksgiving get-together.
