SweetBytes regulars know that that there are so many wonderful ways to prepare these awesome veggies that it almost boggles the mind.....But What About The Basics?? Here are a few tips to get you started:
- Select firm sweet potatoes with even skin color.
- Store sweet potatoes for up to two weeks in a cool, dry area, never in the refrigerator. Wash and dry just before cooking.
- For the most nutrition value, always select Sweet Potatoes with a deep orange color.
- To store cooked sweet potatoes for later use, wrap in plastic wrap and place in the refrigerator.
- Cooked sweet potatoes can also be frozen for later use. Bag 'em up, pop 'em in the freezer, and you can use them to make a quick meal on a later date.
- Sweet potato skin can be peeled before cooking or left on the plate. But you should know that the skin is packed with vitamins and perfectly edible. To eat or not…the choice is yours!

good tips, i have been cooking sweet potatoes my whole life and I didn't know all of those. I am going to try freezing some the next time I cook them.
ReplyDeleteI buy a lot of potatoes at the market and they are really dirty. Should I wash them before I put them up or just leave the dirt on them until I use them? I am going to try to store them longer in my basement. i think they will keep a long time because it is cool.

ReplyDeleteGreat Question! Many farmers leave a little dirt on the potatoes because the skins are very tender when they are fresh dug. A few days of storage toughens the skin and lets the dirt dry out.
ReplyDeleteYou can knock off any loose dirt before storing, but don't wash them until you are ready to cook them. Moisture from washing can increase the risk of spoilage.
