Making Every Penny Count

Whenever there is a dip in the economy, I start to see lots of BOGO (buy one get one) sales at the supermarket. These sales are a great way to save money and it is so much fun getting creative with my cooking and meal planning when I am buying doubles. I stretch my dollar even further by making “BOGO Meals.” These recipes do double duty by serving as a meal for today, plus the start of a second meal for tomorrow. This not only saves money, but also time. With a little planning, you can effortlessly get two delicious meals out of the same ingredients!

Don’t know where to start? This budget-friendly recipe will satisfy your hungry family without starving the piggy bank. Sweet Potato Turkey Meat Loaf starts with a baked sweet potato, making it a perfect way to use one of those leftover spuds. The biggest secret to the taste is the moisture and sweetness from the sweet potato! Best of all, it tastes even better the next day when slices are grilled in a pan with butter, then placed on whole-grain bread to make sandwiches.

Sweet Potato Turkey Meatloaf

INGREDIENTS
1 large sweet potato, peeled and cubed
1 pound ground turkey breast
1 large egg
1 small sweet onion, finely chopped
2 cloves garlic, minced
1/4 cup honey barbecue sauce
1/4 cup ketchup
2 tablespoons Dijon Mustard
2 slices wheat bread, torn into small crumbs
¼ tsp red pepper, or to taste
½ tsp salt, or to taste


1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 quart baking dish.
2. Microwave the sweet potato until tender, then peel and mash until smooth.
3. Mix barbecue sauce, ketchup, Dijon mustard. Reserve half of mixture for top of meatloaf
4. Mix turkey together with ½ of ketchup mixture, egg, onion, garlic, & bread crumbs. Season to taste with salt and pepper. Add the sweet potatoes, and stir until combined. If the mixture is too wet, add more bread crumbs. Use your hands to form the turkey mixture into a loaf shape and place in the prepared baking dish. Top with remaining half of ketchup mixture.
5. Bake in the preheated oven 1 hour. Slice the loaf to serve.
