Super Bowl Burritos

Are you ready for the big showdown? Whether you are a diehard football fan, or you are there to rate the year's best commercials, odds are you will be watching the Super Bowl this Sunday. Of course, the real main event during the Superbowl is the food. While watching the year's most highly anticipated sporting event, my family gathers around the TV surrounded by mountains of snacks, and oceans of drinks.

The #1 game day food rule for my family is that it has to be easy to eat, and there needs to be plenty of it. Of course, I want to spend my time watching the game instead of watching the stove, so the main food rule for me is that it has to be easy to prepare. I’ll bet a lot of you guys are getting bored with the pizza and Cheeto's routine, so let's go deep into our playbooks and pull out a gamestopper with tons of flavor. These Addictive Sweet Potato Burritos are sure to score a Touchdown! These can be made in less than 30 minutes. Also, check out these tips for a fun and easy Super Bowl Party.

Addictive Sweet Potato Burritos
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 6 cups canned kidney beans, drained
  • 2 cups water
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 4 teaspoons prepared mustard
  • 1 pinch cayenne pepper, or to taste
  • 3 tablespoons soy sauce
  • 4 cups cooked and mashed sweet potatoes
  • 12 (10 inch) flour tortillas, warmed
  • 8 ounces shredded Cheddar cheese
Preheat oven to 350 degrees F (175 degrees C).
  1. Heat oil in a medium skillet, and saute onion and garlic until soft. Stir in beans, and mash. Gradually stir in water, and heat until warm. Remove from heat, and stir in spices and soy sauce.
  2. Divide bean mixture and mashed sweet potatoes evenly between the warm flour tortillas. Top with cheese. Fold up tortillas burrito style, and place on a baking sheet.
  3. Bake for 12 minutes in the preheated oven, and serve.

  6. These sound good. I have spent the last 2 hours looking for new super bowl party recipes and this one is the most unique. I plan on having various types of finger foods and meats. I think this one will add a lot of color to my snacks. Plus, it is actually healthy. My family loves black beans, so this should be a hit.

  9. I can honestly say that this was one of the best super bowls ever. The game was intense, the commercials were better than last year and your burritos (along with my guacamole) were a big hit.
